Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 can 20 oz sliced pineapple, drained
  • Maraschino cherries for garnish
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter and pour it into a round cake pan.
  3. Sprinkle the brown sugar over the melted butter.
  4. Arrange the pineapple slices and cherries in the pan.
  5. In a mixing bowl, cream the granulated sugar and eggs together.
  6. Add the vanilla extract and mix well.
  7. Combine the flour, baking powder, and salt in a separate bowl.
  8. Gradually add the dry ingredients to the wet mixture, alternating with any remaining liquid from the pineapple.
  9. Pour the batter over the arranged pineapple and cherries.
  10. Bake for 30-35 minutes, or until a toothpick comes out clean.
  11. Let it cool for 10 minutes, then invert onto a serving plate.
