Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 eggs
  • 1 avocado
  • Fresh herbs like cilantro or parsley

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and peel the sweet potatoes, then cut them into cubes.
  • Toss sweet potato cubes with olive oil, cinnamon, salt, and pepper in a bowl.
  • Spread the seasoned sweet potatoes on a baking sheet and roast for 25-30 minutes.
