Sweet Potato Variations for a Wholesome Breakfast

Breakfast Sweet Potato made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 eggs
  • 1 avocado
  • Fresh herbs like cilantro or parsley

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. Toss sweet potato cubes with olive oil, cinnamon, salt, and pepper in a bowl.
  4. Spread the seasoned sweet potatoes on a baking sheet and roast for 25-30 minutes.
  5. While sweet potatoes are roasting, heat a skillet over medium heat and fry the eggs.
  6. Slice the avocado and season with salt and pepper.
  7. Assemble the dish: layer roasted sweet potatoes, add eggs on top, and garnish with avocado and fresh herbs.
