Ingredients

  • 4 chicken thighs bone-in and skin-on
  • 1/4 cup pure maple syrup
  • 2 medium sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the sweet potatoes by peeling and cutting them into cubes.
  • In a large bowl, combine the cubed sweet potatoes, olive oil, salt, and pepper. Toss them until well-coated.
  • Spread the seasoned sweet potatoes on a baking sheet and place in the oven.
  • In the same bowl, mix the maple syrup, minced garlic, thyme, salt, and pepper.
  • Place the chicken thighs on a separate baking sheet and brush with the maple glaze.
  • Roast both the chicken and sweet potatoes for 25-30 minutes.
  • Check the chicken for doneness; it should reach an internal temperature of 165°F (74°C).
  • Remove both the chicken and sweet potatoes from the oven and let rest for 5 minutes before serving.
