Savory Salmon Sushi Bake made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 pound fresh salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup chopped green onions
  • 1 cup shredded nori seaweed
  • 1 tablespoon rice vinegar

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine rinsed rice and water in a pot, then bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes until rice is tender.
  5. Remove from heat and let the rice sit, covered, for another 10 minutes.
  6. In a bowl, combine mayonnaise, sriracha, soy sauce, and sesame oil.
  7. Flake the cooked salmon into large pieces and fold it into the sauce.
  8. Mix rice vinegar into the cooked rice, then spread evenly in a baking dish.
  9. Layer the flaked salmon mixture over the rice.
  10. Sprinkle chopped green onions and shredded nori over the top.
  11. Bake in the preheated oven for 25-30 minutes.
  12. Allow the sushi bake to cool slightly before slicing and serving.
