Ingredients

  • 1 pound Brussels sprouts halved
  • 1 pound butternut squash peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 4 ounces burrata cheese
  • 4 slices bacon cooked and crumbled
  • 1/2 cup walnuts toasted
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the Brussels sprouts and butternut squash.
  • Toss the vegetables with olive oil, salt, and pepper.
  • Spread the vegetables on a baking sheet in a single layer.
  • Roast for 25-30 minutes, stirring halfway through.
  • Drizzle with maple syrup and toss.
