Ingredients
  

  • 1 pound Brussels sprouts halved
  • 1 pound butternut squash peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 4 ounces burrata cheese
  • 4 slices bacon cooked and crumbled
  • 1/2 cup walnuts toasted
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the Brussels sprouts and butternut squash.
  3. Toss the vegetables with olive oil, salt, and pepper.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through.
  6. Drizzle with maple syrup and toss.
  7. Remove from the oven and let cool slightly.
  8. Assemble the salad with Brussels sprouts, butternut squash, burrata, bacon, walnuts, and feta.
  9. Serve immediately and enjoy!
