Ingredients
  

  • 2 medium beets peeled and cubed
  • 2 medium carrots peeled and sliced
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary optional, for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the vegetables by peeling and cutting them into uniform pieces.
  3. In a large bowl, combine the beets and carrots with honey, olive oil, salt, and pepper.
  4. Spread the mixture on a lined baking sheet, making sure the pieces are in a single layer.
  5. Roast in the preheated oven for 30-40 minutes, stirring halfway through.
  6. Check for doneness by piercing the vegetables with a fork; they should be tender.
  7. Once done, remove from the oven and garnish with fresh herbs if desired.
