Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 ounces Brie cheese rind removed
  • 1 cup cranberry sauce
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup spinach chopped (optional)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken breasts by cutting a pocket into each piece.
  3. Mix the Brie, cranberry sauce, thyme, and optional spinach in a bowl.
  4. Stuff each chicken breast with the cheese mixture.
  5. Season the stuffed chicken breasts with salt and pepper.
  6. Heat olive oil in an oven-safe skillet over medium heat.
  7. Sear each chicken breast for about 4-5 minutes per side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes.
  9. Once cooked, let the chicken rest for 5 minutes before slicing.
  10. Serve warm, garnished with additional thyme if desired.
