Once combined, fold in chopped prosciutto remaining Parmesan cheese.
Stuff the mixture into each jalapeño half, pressing it down to ensure it stays in place.
Arrange the stuffed jalapeños on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, until the tops are golden brown and the jalapeños are tender.
Garnish with fresh parsley before serving.
