Method
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface.
- Cut the pastry into squares about 3 inches in size.
- Place a small piece of brie and a spoonful of cranberry sauce in the center of each pastry square.
- Fold the pastry over the filling to create a pocket and seal the edges.
- Brush the tops with the beaten egg.
- Bake for 15-20 minutes until golden brown.
- Optionally, sprinkle with fresh thyme before serving.
