Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups cherry tomatoes halved
  • 1 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper on both sides.
  • In a skillet, heat olive oil over medium-high heat.
  • Sear the chicken breasts for 4-5 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Add the halved cherry tomatoes, chopped basil, and balsamic vinegar to the skillet.
  • Cook the mixture for 3-4 minutes until the tomatoes soften slightly.
  • Spoon the bruschetta mixture over the chicken in the baking dish.
  • If desired, sprinkle shredded mozzarella cheese over the top.
  • Bake in the oven for 20-25 minutes until the chicken is cooked through.
  • Remove from oven and let rest for 5 minutes before serving.
