Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and pepper on both sides.
In a skillet, heat olive oil over medium-high heat.
Sear the chicken breasts for 4-5 minutes on each side until golden brown.
Transfer the chicken to a baking dish and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Add the halved cherry tomatoes, chopped basil, and balsamic vinegar to the skillet.
Cook the mixture for 3-4 minutes until the tomatoes soften slightly.
Spoon the bruschetta mixture over the chicken in the baking dish.
If desired, sprinkle shredded mozzarella cheese over the top.
Bake in the oven for 20-25 minutes until the chicken is cooked through.
Remove from oven and let rest for 5 minutes before serving.
