Ingredients

  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños fresh or pickled
  • 1/4 cup crispy bacon bits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, bacon bits, garlic powder, onion powder, salt, and pepper.
  • In the chicken breasts, make a pocket by slicing each breast lengthwise, being careful not to cut all the way through.
  • Stuff each chicken breast with the prepared filling, ensuring they are filled generously.
  • Secure the openings of each chicken breast with toothpicks or kitchen twine to keep the filling intact during cooking.
  • Heat olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
  • Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temp should reach 165°F).
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
  • Serve the stuffed chicken warm, garnished with additional jalapeños or herbs if desired.
