Savor the Heat: Jalapeño Popper Stuffed Chicken

Layers of creamy cheese and spicy jalapeños envelop tender chicken, creating a mouthwatering dish ideal for gatherings or weeknight dinners.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños fresh or pickled
  • 1/4 cup crispy bacon bits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, bacon bits, garlic powder, onion powder, salt, and pepper.
  3. In the chicken breasts, make a pocket by slicing each breast lengthwise, being careful not to cut all the way through.
  4. Stuff each chicken breast with the prepared filling, ensuring they are filled generously.
  5. Secure the openings of each chicken breast with toothpicks or kitchen twine to keep the filling intact during cooking.
  6. Heat olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
  7. Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temp should reach 165°F).
  8. Remove from the oven and let the chicken rest for 5 minutes before serving.
  9. Serve the stuffed chicken warm, garnished with additional jalapeños or herbs if desired.
