Ingredients
  

  • 2 pounds beef roast
  • 4 medium carrots sliced
  • 3 large potatoes cubed
  • 1 onion quartered
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the beef by seasoning it with salt, pepper, thyme, and rosemary.
  3. In a large roasting pan, combine the chopped vegetables: carrots, potatoes, onions, and garlic.
  4. Drizzle olive oil over the vegetables and season with salt, pepper, and any remaining herbs.
  5. Place the seasoned beef on top of the vegetables in the roasting pan.
  6. Roast in the oven for about 1.5 to 2 hours, or until the beef reaches your desired doneness.
  7. Remove the pan from the oven and let the beef rest for at least 15 minutes before slicing.
  8. Slice the beef against the grain and serve with the roasted vegetables.
