Ingredients

  • 1 lb ground beef
  • 1 medium onion chopped
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes, undrained
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup corn canned or frozen
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups crushed tortilla chips

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef and onion until the beef is fully cooked, about 5-7 minutes. Drain any excess fat.
  • Stir in the kidney beans, diced tomatoes, cream of mushroom soup, corn, chili powder, garlic powder, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes.
  • In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips on the bottom.
  • Pour the beef mixture over the tortilla chip layer, spreading it evenly.
  • Sprinkle the remaining tortilla chips on top of the beef mixture.
  • Top with shredded cheddar cheese, covering the tortilla chips completely.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for 5-10 minutes before serving.
