Savor the Comfort of John Wayne Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes, undrained
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup corn canned or frozen
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups crushed tortilla chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef and onion until the beef is fully cooked, about 5-7 minutes. Drain any excess fat.
  3. Stir in the kidney beans, diced tomatoes, cream of mushroom soup, corn, chili powder, garlic powder, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes.
  4. In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips on the bottom.
  5. Pour the beef mixture over the tortilla chip layer, spreading it evenly.
  6. Sprinkle the remaining tortilla chips on top of the beef mixture.
  7. Top with shredded cheddar cheese, covering the tortilla chips completely.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Remove from the oven and let it cool for 5-10 minutes before serving.
