Refreshing Avocado Black Bean Salad with Rice
Bright, fresh flavors of avocado and black beans combine with fluffy rice in this vibrant salad, ideal for summer gatherings or a nutritious side dish any time.
- 1 cup cooked rice
- 1 can black beans 15 oz, rinsed and drained
- 1 large ripe avocado diced
- 1 cup cherry tomatoes halved
- 1 small red onion finely chopped
- 1 bell pepper any color, diced
- 1/4 cup fresh cilantro chopped
- Juice of 2 limes
- Salt and pepper to taste
Cook the rice according to package instructions and let it cool.
In a large bowl, combine the black beans and cooked rice.
Add the diced avocado, cherry tomatoes, red onion, and bell pepper.
Sprinkle in the chopped cilantro and squeeze in lime juice.
Season the salad with salt and pepper to taste.
Toss gently to combine all the ingredients evenly and serve immediately.
