Ingredients

  • 1 cup cooked rice
  • 1 can black beans 15 oz, rinsed and drained
  • 1 large ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1 small red onion finely chopped
  • 1 bell pepper any color, diced
  • 1/4 cup fresh cilantro chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  • Cook the rice according to package instructions and let it cool.
  • In a large bowl, combine the black beans and cooked rice.
  • Add the diced avocado, cherry tomatoes, red onion, and bell pepper.
  • Sprinkle in the chopped cilantro and squeeze in lime juice.
  • Season the salad with salt and pepper to taste.
  • Toss gently to combine all the ingredients evenly and serve immediately.
