  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Slice the chicken breast into thin strips and season with salt, pepper, and dried oregano.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken to the skillet and stir-fry for about 5-6 minutes until cooked through.
  4. Introduce minced garlic and stir well, cooking for another minute until fragrant.
  5. Add the sliced bell pepper and zucchini, stirring to combine.
  6. Toss in the halved cherry tomatoes and stir-fry for an additional 2-3 minutes.
  7. Taste the stir-fry and adjust seasoning if needed, then remove from heat.
  8. Serve immediately, garnished with fresh herbs if desired.
