Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine peanut butter, granulated sugar, and brown sugar until creamy.
Add the eggs, one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
Chill the cookie dough for at least 30 minutes in the refrigerator.
Scoop tablespoon-sized dough balls and place them on a baking sheet lined with parchment paper. Allow space between each ball.
Bake for 10-12 minutes or until the edges are lightly golden.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
