Preheat the oven to 400°F (200°C).
Prepare the glaze by combining maple syrup, Dijon mustard, garlic powder, paprika, salt, and pepper in a bowl.
Place the chicken breasts in a baking dish and pour half of the glaze over them.
In a separate bowl, toss cubed sweet potatoes with olive oil, cinnamon, salt, and pepper.
Arrange the sweet potatoes around the chicken in the baking dish.
Bake in the preheated oven for 25–30 minutes, until chicken is cooked through and sweet potatoes are tender.
Remove the dish from the oven, pour the remaining glaze on the chicken, and return to the oven for an additional 5–10 minutes.
Once done, allow the dish to rest for 5 minutes before serving.
Garnish with fresh parsley and serve warm.
