Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 medium sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the glaze by combining maple syrup, Dijon mustard, garlic powder, paprika, salt, and pepper in a bowl.
  • Place the chicken breasts in a baking dish and pour half of the glaze over them.
  • In a separate bowl, toss cubed sweet potatoes with olive oil, cinnamon, salt, and pepper.
  • Arrange the sweet potatoes around the chicken in the baking dish.
  • Bake in the preheated oven for 25–30 minutes, until chicken is cooked through and sweet potatoes are tender.
  • Remove the dish from the oven, pour the remaining glaze on the chicken, and return to the oven for an additional 5–10 minutes.
  • Once done, allow the dish to rest for 5 minutes before serving.
  • Garnish with fresh parsley and serve warm.
