Preheat the oven to 350°F (175°C).
In a large bowl, mix together the peanut butter, granulated sugar, brown sugar, eggs, and vanilla until smooth.
Add the baking soda and salt, mixing until fully incorporated.
Scoop tablespoon-sized balls of dough and roll them in granulated sugar before placing them on a baking sheet lined with parchment paper.
Bake the cookies for 10 to 12 minutes or until the edges are golden.
Immediately after taking them out, press a chocolate kiss into the center of each cookie.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
