Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter cold
  • 3/4 cup milk
  • 1 pound ground sausage
  • 1/4 cup all-purpose flour for gravy
  • 2 cups milk for gravy
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 450°F (232°C).
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Stir in the milk until just combined; do not overmix.
  • Turn the dough out onto a floured surface and knead gently a few times before rolling out.
  • Roll out to about 1-inch thick and cut out biscuits with a biscuit cutter.
  • Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
  • While the biscuits are baking, prepare the sausage gravy.
  • In a skillet, cook the sausage over medium heat until browned and cooked through, about 5-7 minutes.
  • Sprinkle in the flour and stir for 1-2 minutes until well incorporated.
  • Gradually whisk in the milk, ensuring no lumps remain.
  • Simmer the gravy for 5-10 minutes until thickened, then season with salt and pepper to taste.
  • Remove the biscuits from the oven and serve warm, topped with the sausage gravy.
