Biscuits and Gravy – The Classic Southern Comfort Breakfast made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter cold
  • 3/4 cup milk
  • 1 pound ground sausage
  • 1/4 cup all-purpose flour for gravy
  • 2 cups milk for gravy
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 450°F (232°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined; do not overmix.
  5. Turn the dough out onto a floured surface and knead gently a few times before rolling out.
  6. Roll out to about 1-inch thick and cut out biscuits with a biscuit cutter.
  7. Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
  8. While the biscuits are baking, prepare the sausage gravy.
  9. In a skillet, cook the sausage over medium heat until browned and cooked through, about 5-7 minutes.
  10. Sprinkle in the flour and stir for 1-2 minutes until well incorporated.
  11. Gradually whisk in the milk, ensuring no lumps remain.
  12. Simmer the gravy for 5-10 minutes until thickened, then season with salt and pepper to taste.
  13. Remove the biscuits from the oven and serve warm, topped with the sausage gravy.
