Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 pounds potatoes peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste for mashed potatoes

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, garlic, rosemary, thyme, honey, salt, and pepper to create the glaze.
  3. Place the chicken breasts in a baking dish and pour the glaze evenly over the top.
  4. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. While the chicken is baking, prepare the mashed potatoes. Place the cubed potatoes in a pot and cover with cold water.
  6. Bring the water to a boil and cook the potatoes until they are tender, about 15-20 minutes.
  7. Drain the potatoes and return them to the pot. Add the heavy cream and butter, and mash until smooth.
  8. Season the mashed potatoes with salt and pepper to taste.
  9. Serve the glazed chicken breast over a generous scoop of mashed potatoes.
  10. Garnish with extra herbs if desired.
