Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 pounds potatoes peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste for mashed potatoes

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together olive oil, garlic, rosemary, thyme, honey, salt, and pepper to create the glaze.
  • Place the chicken breasts in a baking dish and pour the glaze evenly over the top.
  • Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  • While the chicken is baking, prepare the mashed potatoes. Place the cubed potatoes in a pot and cover with cold water.
  • Bring the water to a boil and cook the potatoes until they are tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add the heavy cream and butter, and mash until smooth.
  • Season the mashed potatoes with salt and pepper to taste.
  • Serve the glazed chicken breast over a generous scoop of mashed potatoes.
  • Garnish with extra herbs if desired.
