Ingredients

  • 8 ounces spaghetti
  • 1 pound large shrimp peeled and deveined
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 4 strips of bacon or pancetta diced
  • Salt and freshly cracked black pepper to taste
  • Chopped parsley for garnish

Instructions

  • Cook the spaghetti according to package instructions.
  • In a large skillet, cook the diced bacon over medium heat until crispy.
  • Add the minced garlic and shrimp to the skillet, cooking until shrimp are pink and opaque.
  • In a bowl, whisk together the eggs, grated Parmesan, salt, and black pepper.
  • Combine the cooked spaghetti with the shrimp and bacon mixture in the skillet.
  • Remove the skillet from heat and quickly stir in the egg and cheese mixture.
  • If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
