Preheat your oven to 425°F (220°C).
Prepare your vegetables by washing and cutting them as listed in the ingredients.
In a large mixing bowl, combine the chopped broccoli, carrots, red bell pepper, cherry tomatoes, and minced garlic.
Drizzle olive oil over the vegetables and season with salt and pepper. Toss to coat evenly.
Spread the vegetable mixture in a single layer on a large baking sheet.
Roast the vegetables in the preheated oven for 25–30 minutes, stirring halfway through.
Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the roasted vegetables.
Return the vegetables to the oven for another 5–10 minutes until the cheese is melted and golden.
Taste and adjust seasoning if necessary before serving.
