Ingredients
  

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 corn tortillas
  • Oil for frying
  • Salsa and sour cream for serving

Method
 

  1. Preheat the oven to 200°F and prepare a baking sheet.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, parsley, garlic, egg, salt, and pepper.
  3. Shape the mixture into small meatballs, about 1 inch in diameter.
  4. In a skillet over medium heat, add enough oil to cover the bottom. Fry the meatballs until browned.
  5. Remove the meatballs from the skillet and drain on paper towels.
  6. Warm the tortillas in the same skillet until pliable.
  7. Place a meatball on each tortilla and tightly roll them up.
  8. Fry the taquitos in the skillet until golden and crispy, about 3-4 minutes per side.
  9. Drain the taquitos on paper towels and keep warm in the preheated oven.
  10. Serve with salsa and sour cream on the side.
