Flavor-Packed Meatloaf Cups for Quick Dinners

Meatloaf Cups made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup shredded cheese optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground beef, breadcrumbs, milk, egg, finely chopped onions, minced garlic, Worcestershire sauce, salt, and black pepper.
  • If using cheese, fold in the shredded cheese at this point.
  • Lightly grease a muffin tin or line it with cupcake liners.
  • Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
  • Bake in the preheated oven for 20-25 minutes or until the meatloaf cups are cooked through.
  • Let the meatloaf cups rest for 5 minutes before removing them from the tin.
  • Serve warm, optionally topped with additional barbecue sauce or ketchup.
