Elevate Your Meal with Cauliflower Fried Rice

This Cauliflower Fried Rice combines tender vegetables and savory seasonings, creating a satisfying dish that's ideal for weeknight dinners or meal prep.

Ingredients

  • 1 medium head of cauliflower riced
  • 2 tablespoons vegetable oil
  • 2 large eggs beaten
  • 1 cup mixed vegetables e.g., peas, carrots, bell peppers
  • 3 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon sesame oil
  • 2 green onions sliced

Instructions

  • Prepare the cauliflower rice.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the garlic and stir-fry for about 30 seconds.
  • Add the riced cauliflower and stir-fry for 3-4 minutes.
  • Push the cauliflower rice to one side of the pan, then add the beaten eggs.
  • Once the eggs are set, mix everything together.
  • Stir in the mixed vegetables and cook for another 2-3 minutes.
  • Pour in the soy sauce and sesame oil, and mix well.
  • Finally, fold in the green onions and serve.
