Prepare the cauliflower rice.
Heat the vegetable oil in a large skillet over medium-high heat.
Add the garlic and stir-fry for about 30 seconds.
Add the riced cauliflower and stir-fry for 3-4 minutes.
Push the cauliflower rice to one side of the pan, then add the beaten eggs.
Once the eggs are set, mix everything together.
Stir in the mixed vegetables and cook for another 2-3 minutes.
Pour in the soy sauce and sesame oil, and mix well.
Finally, fold in the green onions and serve.
