- Prepare the cauliflower rice.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the garlic and stir-fry for about 30 seconds.
- Add the riced cauliflower and stir-fry for 3-4 minutes.
- Push the cauliflower rice to one side of the pan, then add the beaten eggs.
- Once the eggs are set, mix everything together.
- Stir in the mixed vegetables and cook for another 2-3 minutes.
- Pour in the soy sauce and sesame oil, and mix well.
- Finally, fold in the green onions and serve.
