Preheat the oven to 400°F (200°C).
Prepare the chicken breasts by seasoning them with salt and pepper.
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
In another bowl, whisk the eggs until smooth.
Dip each chicken breast into the egg and then coat evenly with the breadcrumb mixture.
Place the coated chicken breasts on a baking tray and bake for 20-25 minutes or until golden and cooked through.
While the chicken is baking, prepare the sandwich ingredients: chop the romaine, and set out the dressing and extra cheese.
Once the chicken is cooked and cooled slightly, assemble the sandwiches using crusty bread, chicken, lettuce, and Caesar dressing.
Top with additional Parmesan cheese before closing the sandwich.
Serve immediately with a side of your choice, such as potato chips or a light salad.
