Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices of crusty bread
  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing
  • Extra Parmesan for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the chicken breasts by seasoning them with salt and pepper.
  • In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  • In another bowl, whisk the eggs until smooth.
  • Dip each chicken breast into the egg and then coat evenly with the breadcrumb mixture.
  • Place the coated chicken breasts on a baking tray and bake for 20-25 minutes or until golden and cooked through.
  • While the chicken is baking, prepare the sandwich ingredients: chop the romaine, and set out the dressing and extra cheese.
  • Once the chicken is cooked and cooled slightly, assemble the sandwiches using crusty bread, chicken, lettuce, and Caesar dressing.
  • Top with additional Parmesan cheese before closing the sandwich.
  • Serve immediately with a side of your choice, such as potato chips or a light salad.
