Fold in the diced apples and caramel bits gently into the dough.
Scoop tablespoon-sized portions of dough onto lined baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden.
Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to wire racks.
