Preheat your oven to 350°F (175°C).
In a large bowl, combine the ricotta cheese, softened butter, and granulated sugar.
Add the egg, orange zest, orange juice, and vanilla extract to the bowl, and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes, until the edges are lightly golden.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar just before serving.
