Ingredients

  • 1 cup unsalted butter softened

  • 1 cup fresh strawberries diced
  • 8 ounces cream cheese softened
  • 1/4 cup powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add in the eggs one at a time, followed by the vanilla extract, and mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the diced fresh strawberries.
  • In a small bowl, mix the softened cream cheese with the powdered sugar until smooth.
  • Scoop about 1.5 tablespoons of cookie dough and flatten slightly. Place about 1 teaspoon of the cream cheese mixture in the center, then top with another scoop of dough.
  • Place the filled cookies on a baking sheet lined with parchment paper, leaving about 2 inches between each.
  • Bake for 12-15 minutes, until the edges are lightly golden.
