Ingredients
  

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter melted
  • 1 cup heavy cream
  • 1 cup cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • 1-2 tablespoons crushed peppermint candies or candy canes

Method
 

  1. Prepare the crust by combining chocolate cookie crumbs and melted butter.
  2. Chill the crust in the refrigerator while preparing the filling.
  3. Whip the heavy cream until peaks form.
  4. In another bowl, beat the cream cheese until smooth and creamy.
  5. Gradually add powdered sugar, vanilla extract, and peppermint extract to the cream cheese.
  6. Fold the whipped cream into the cream cheese mixture.
  7. Pour the filling into the chilled crust and smooth the top.
  8. Chill the pie for at least 4 hours or until it firms up.
  9. Top the pie with crushed peppermint candies just before serving.
