Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 large egg yolk
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup freshly squeezed Meyer lemon juice
  • Zest of 2 Meyer lemons
  • 1 tablespoon all-purpose cornstarch
  • 1 tablespoon unsalted butter melted

Method
 

  1. Prepare the pie crust by mixing flour, sugar, and salt.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and a few tablespoons of cold water.
  4. Shape the dough into a disk and refrigerate for at least 30 minutes.
  5. Roll out the dough and fit it into a pie dish.
  6. Pre-bake the crust at 350°F (175°C) for 15 minutes.
  7. Prepare the filling by whisking together eggs and sugar until smooth.
  8. Add Meyer lemon juice, zest, cornstarch, and melted butter to the egg mixture.
  9. Pour the filling into the pre-baked crust and smooth the top.
  10. Bake the pie at 350°F (175°C) for 25-30 minutes until set.
  11. Allow the pie to cool completely before serving.
