Delightful Mary Berry Mini Christmas Cakes

Mary Berry Mini Christmas Cakes​ made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 200 g mixed dried fruit
  • 100 g glace cherries
  • 100 g unsalted butter
  • 200 g light brown sugar
  • 2 large eggs
  • 100 g self-raising flour
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • Zest of 1 lemon
  • 2 tbsp orange juice

Method
 

  1. Preheat your oven to 150°C (300°F).
  2. Prepare your baking tins by greasing and lining them with parchment paper.
  3. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Sift in the self-raising flour, ground cinnamon, and mixed spice, then gently fold in.
  6. Stir in the mixed dried fruit, glace cherries, lemon zest, and orange juice until evenly distributed.
  7. Spoon the mixture into your prepped tins, filling them about three-quarters full.
  8. Bake in the preheated oven for 35-40 minutes, or until a skewer comes out clean.
  9. Remove the cakes from the oven and let them cool in the tins before transferring to a wire rack.
  10. Decorate as desired with icing, nuts, or fruit for a festive touch.
