Ingredients

  • 200 g mixed dried fruit
  • 100 g glace cherries
  • 100 g unsalted butter
  • 200 g light brown sugar
  • 2 large eggs
  • 100 g self-raising flour
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • Zest of 1 lemon
  • 2 tbsp orange juice

Instructions

  • Preheat your oven to 150°C (300°F).
  • Prepare your baking tins by greasing and lining them with parchment paper.
  • In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Sift in the self-raising flour, ground cinnamon, and mixed spice, then gently fold in.
  • Stir in the mixed dried fruit, glace cherries, lemon zest, and orange juice until evenly distributed.
  • Spoon the mixture into your prepped tins, filling them about three-quarters full.
  • Bake in the preheated oven for 35-40 minutes, or until a skewer comes out clean.
  • Remove the cakes from the oven and let them cool in the tins before transferring to a wire rack.
  • Decorate as desired with icing, nuts, or fruit for a festive touch.
