Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
In a medium bowl, combine panko breadcrumbs, olive oil, Dijon mustard, fresh parsley, fresh dill, minced garlic, lemon zest, salt, and pepper until the mixture is well blended.
Place the cod fillets in the prepared baking dish, and drizzle lemon juice over them. Season each fillet with a pinch of salt and pepper.
Spoon the panko mixture evenly over the top of each cod fillet, pressing gently to help it adhere.
Bake the cod in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The topping should be golden brown.
Remove from the oven and let rest for a few minutes before serving. Garnish with extra lemon wedges if desired.
