Ingredients

  • 4 5-6 ounces cod fillets, skinless and boneless
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 clove garlic minced
  • 1 lemon zested and juiced
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  • In a medium bowl, combine panko breadcrumbs, olive oil, Dijon mustard, fresh parsley, fresh dill, minced garlic, lemon zest, salt, and pepper until the mixture is well blended.
  • Place the cod fillets in the prepared baking dish, and drizzle lemon juice over them. Season each fillet with a pinch of salt and pepper.
  • Spoon the panko mixture evenly over the top of each cod fillet, pressing gently to help it adhere.
  • Bake the cod in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The topping should be golden brown.
