Ingredients
  

  • 8 ounces of pasta cavatappi or rotini
  • 2 cups of fresh corn or frozen, thawed
  • 1 cup of cherry tomatoes halved
  • 1/2 cup of red onion finely diced
  • 1/2 cup of mayonnaise
  • 1/4 cup of sour cream
  • 1 tablespoon of lime juice
  • 1 teaspoon of chili powder
  • 1/4 cup of cilantro chopped
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions.
  2. Drain and rinse the pasta with cold water.
  3. In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add the cooked pasta, corn, cherry tomatoes, red onion, and cilantro to the bowl.
