Preheat your oven to 350°F (175°C).
Spread the mixed nuts on a baking sheet.
Roast nuts in the oven for 10-12 minutes, until golden and fragrant.
Remove the nuts from the oven and let them cool slightly.
Melt chocolate chips and coconut oil together in a microwave-safe bowl.
Mix in the vanilla extract after the chocolate is smooth.
Add the cooled nuts to the melted chocolate mixture and stir to coat.
Using a fork or your hands, form clusters of the chocolate-coated nuts.
Place the clusters on a parchment-lined baking sheet to set.
Sprinkle with candy corn and sprinkles while still warm, if desired.
Allow the clusters to cool completely until firm.
Store in an airtight container at room temperature.
