Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries finely chopped
  • 1/2 cup powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, and salt.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture and beat until combined.
  5. Gradually incorporate the dry mixture into the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped strawberries, being careful not to over-mix.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them at least 2 inches apart.
  8. Bake in the preheated oven for 10–12 minutes or until the edges are light golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Dust with powdered sugar before serving for an elegant finish.
