Ingredients

  • 2 boneless skinless chicken breasts
  • 8 ounces fettuccine or penne
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Prepare the pasta according to package instructions.
  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • In a skillet, heat olive oil over medium-high heat and sear the chicken for 5–7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and set it aside to rest, keeping it warm.
  • In the same skillet, add minced garlic and sauté for 1–2 minutes until fragrant.
  • Pour in the chicken broth, allowing it to deglaze the skillet by scraping up any brown bits stuck to the bottom.
  • Reduce the heat to low and stir in the heavy cream and Parmesan cheese until melted and smooth.
  • Return the chicken to the skillet, and let it simmer for 2–3 minutes to meld the flavors.
  • Add the cooked pasta to the skillet and toss to combine, adding reserved pasta water as needed to loosen the sauce.
  • Garnish with fresh parsley before serving.
