Deliciously Rich Chocolate Thumbprint Cookies

Chocolate Thumbprint Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • Your choice of filling e.g., jam, ganache, peanut butter

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined.
  6. Scoop tablespoon-sized portions of the dough and place them on a parchment-lined baking sheet.
  7. Make an indentation in the center of each cookie with your thumb or the back of a spoon.
  8. Fill each indentation with your desired filling.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are set.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
