Ingredients

  • 8 ounces fettuccine or penne pasta
  • 2 boneless skinless chicken breasts
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Cook the pasta according to package instructions until al dente, then drain and set aside.
  • While the pasta cooks, season the chicken breasts with salt and pepper.
  • In a large skillet, heat olive oil over medium heat, then add the seasoned chicken.
  • Cook the chicken for about 6-7 minutes per side until golden and cooked through, then remove and slice.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Reduce the heat, then pour in the heavy cream, stirring to combine with the fragrant garlic.
  • Add the grated Parmesan cheese and stir until melted and the sauce is smooth.
  • Mix in the cooked pasta, adding reserved pasta water as needed to reach the desired consistency.
  • Slice the chicken and serve on top of the pasta, garnished with chopped parsley.
