In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart as it cooks.
Add diced onions and minced garlic to the pot, cooking until the onions are translucent.
Pour in the chicken broth and add the diced potatoes, bringing the mixture to a boil.
Reduce heat to simmer for about 15 minutes or until potatoes are tender.
Once the potatoes are soft, add the chopped kale and heavy cream, stirring gently.
Season with salt and pepper to taste, and continue to simmer for an additional 5 minutes to heat through.
Serve hot, garnished with additional kale or herbs if desired.
