Method
- Prepare the filling by mixing mascarpone, powdered sugar, espresso, and vanilla.
- Chill the filling mixture for at least 30 minutes.
- Scoop out chilled mixture and roll it into balls.
- Melt dark chocolate in a double boiler or microwave.
- Dip each truffle in melted chocolate and shake off excess.
- Roll the dipped truffles in cocoa powder.
- Chill the chocolate-coated truffles for at least 30 minutes before serving.
