In a mixing bowl, combine peanut butter and honey/maple syrup.
Add the chocolate protein powder and mix until smooth.
Melt the dark chocolate chips and coconut oil together in a microwave-safe bowl.
Line a muffin tin with paper liners and add a spoonful of melted chocolate to each liner.
Top the melted chocolate layer with the peanut butter mixture.
Finish with another layer of melted chocolate on top of the peanut butter layer.
Refrigerate the cups for at least an hour until solid.
Once set, carefully remove the cups from the liners and enjoy!
