Delicious Protein-Packed Peanut Butter Cups

Protein Peanut Butter Cups made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 cup creamy natural peanut butter
  • 1/2 cup chocolate protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 teaspoon sea salt

Instructions

  • In a mixing bowl, combine peanut butter and honey/maple syrup.
  • Add the chocolate protein powder and mix until smooth.
  • Melt the dark chocolate chips and coconut oil together in a microwave-safe bowl.
  • Line a muffin tin with paper liners and add a spoonful of melted chocolate to each liner.
  • Top the melted chocolate layer with the peanut butter mixture.
  • Finish with another layer of melted chocolate on top of the peanut butter layer.
  • Refrigerate the cups for at least an hour until solid.
  • Once set, carefully remove the cups from the liners and enjoy!
