Ingredients

  • 1 package 16 oz phyllo pastry, thawed
  • 8 oz cream cheese softened
  • 1 cup Greek yogurt
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chopped nuts walnuts, pistachios, or almonds
  • 1/2 cup unsalted butter melted
  • 1/2 cup honey
  • 1 tsp ground cinnamon

Instructions

  • 1. Preheat your oven to 350°F (175°C).
  • 2. In a mixing bowl, combine softened cream cheese, Greek yogurt, sugar, eggs, vanilla, and cinnamon until smooth.
  • 3. Stir in the chopped nuts, distributing them evenly throughout the mixture.
  • 4. Prepare your phyllo pastry by unfolding it and covering it with a damp towel to prevent it from drying out.
  • 5. Brush a baking sheet with melted butter and layer 4 sheets of phyllo, brushing each layer with melted butter.
  • 6. Spread a thin layer of the cheesecake filling on top of the phyllo layers.
  • 7. Repeat the layering process until all the filling is used, finishing with 4 more layers of buttered phyllo on top.
  • 8. Cut the layered sheets into squares or diamond shapes before baking.
  • 9. Bake for 25-30 minutes or until golden brown and crunchy.
  • 10. Drizzle honey over the warm cookies and allow them to cool before serving.
