Ingredients

  • 1 cup corn flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup warm water
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1 avocado sliced
  • Lime wedges for serving

Instructions

  • In a bowl, mix the corn flour, salt, and baking powder. Gradually add warm water while stirring until a dough forms.
  • Knead the dough gently for a few minutes until smooth. Divide it into 8 equal balls.
  • Using a tortilla press or a rolling pin, flatten each ball between two sheets of parchment paper to form thin tortillas.
  • Heat a skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side or until lightly golden. Keep warm in a towel.
  • In the same skillet, add olive oil and heat over medium. Add ground beef or turkey, breaking it apart with a spatula, and cook until browned.
  • Stir in taco seasoning, followed by a splash of water to help the spices adhere. Cook for an additional 3-5 minutes.
  • Assemble the tacos by placing the meat mixture on each tortilla. Top with lettuce, tomatoes, cheese, cilantro, and avocado slices.
  • Serve immediately with lime wedges on the side for an extra burst of flavor.
