Ingredients

  • 2 cups rolled oats
  • 2 cups grated carrots
  • 1 cup Greek yogurt
  • 4 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans optional

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and optional chopped nuts.
  • In a separate bowl, whisk together the grated carrots, Greek yogurt, honey or maple syrup, and eggs until well combined.
  • Pour the wet mixture into the dry ingredients and stir until just combined.
