  • 12 ounces fettuccine
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts
  • Salt and pepper to taste
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon nutmeg optional
  • Fresh parsley for garnish optional

Method
 

  1. Cook the fettuccine according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Season the chicken with salt and pepper, then add it to the skillet.
  4. Cook the chicken for about 5-7 minutes per side, or until fully cooked through.
  5. Add minced garlic to the skillet, cooking for 1-2 minutes until fragrant.
  6. Pour in the heavy cream and simmer for a few minutes.
  7. Stir in the grated Parmesan cheese until melted and well combined.
  8. If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.
  9. Toss the cooked fettuccine in the sauce until well coated.
  10. Slice the cooked chicken and serve it over the pasta.
