Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup diced apples
  • 1/2 cup caramel bits
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, rolled oats, baking soda, cinnamon, and salt. Mix well.
  • In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  • Add in the egg and vanilla extract, mixing until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, folding until just combined.
  • Gently fold in the diced apples and caramel bits until evenly distributed.
  • Scoop tablespoon-sized balls of dough onto parchment-lined baking sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
