Ingredients

  • 1 cup mixed nuts almonds, cashews, walnuts
  • 1 cup dates pitted
  • 1/2 cup dark chocolate chips 70% cocoa or higher
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and prepare a baking dish.
  • In a food processor, combine the mixed nuts and pulse until coarsely chopped.
  • Add the pitted dates, melted coconut oil, vanilla extract, and sea salt to the nuts, and process until combined.
  • Fold in the dark chocolate chips gently with a spatula.
  • Transfer the mixture into the prepared baking dish and press down evenly.
  • Bake for approximately 20 minutes or until golden brown on the edges.
  • Let the bars cool completely in the dish before slicing.
  • Once cooled, remove the bars from the dish, cut into squares or rectangles, and sprinkle with a bit more sea salt if desired.
