Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • 1/2 cup feta cheese crumbled
  • Fresh basil for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper.
  • Add chicken breasts to the bowl and coat them well with the marinade. Let them sit for at least 15 minutes.
  • Place the marinated chicken breasts on a baking tray lined with parchment paper.
  • Bake the chicken for 25-30 minutes or until cooked through.
  • While the chicken bakes, sauté the cherry tomatoes and spinach in a skillet over medium heat.
  • Remove the chicken from the oven and let it rest for a few minutes before serving.
