This Crab and Shrimp Stuffed Salmon harmonizes the sweetness of seafood with buttery richness, ideal for special occasions or a cozy seafood dinner at home.

Ingredients

  • 4 salmon fillets 6 oz each
  • 1/2 cup cooked crab meat
  • 1/2 cup cooked shrimp chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup cream cheese softened
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 lemon sliced

Method

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the stuffing mixture by combining crab meat, shrimp, breadcrumbs, cream cheese, parsley, garlic powder, salt, and pepper in a bowl.
  3. Make a pocket in each salmon fillet using a sharp knife, being careful not to cut through the bottom.
  4. Spoon the stuffing mixture into each salmon pocket, pressing gently to pack it in.
  5. Heat olive oil in a skillet over medium-high heat, and sear each salmon fillet for 2-3 minutes on each side until golden brown.
  6. Transfer the seared salmon to a baking dish and top with lemon slices.
  7. Bake in the preheated oven for about 15-20 minutes or until salmon is cooked through and flakes easily with a fork.
  8. Remove from the oven, allow to rest for a few minutes, and then serve garnished with additional parsley and lemon wedges.
