Preheat the oven to 375°F (190°C).
Prepare the stuffing mixture by combining crab meat, shrimp, breadcrumbs, cream cheese, parsley, garlic powder, salt, and pepper in a bowl.
Make a pocket in each salmon fillet using a sharp knife, being careful not to cut through the bottom.
Spoon the stuffing mixture into each salmon pocket, pressing gently to pack it in.
Heat olive oil in a skillet over medium-high heat, and sear each salmon fillet for 2-3 minutes on each side until golden brown.
Transfer the seared salmon to a baking dish and top with lemon slices.
Bake in the preheated oven for about 15-20 minutes or until salmon is cooked through and flakes easily with a fork.
Remove from the oven, allow to rest for a few minutes, and then serve garnished with additional parsley and lemon wedges.
